I've always admired fried chicken prepared by Malays or Indians because of the many spices they used to cook the yummy chicken. I have to admit this has more steps than what we Chinese would normally take but trust me, it's well worth it.

Ingredients
Serves 4 pax

1.8 kg chicken (any parts that you desire)
1.5 tablespoon curry powder
1 tablespoon tumeric powder
1 tablespoon chilli powder
2 eggs
0.5 tablespoon coriander powder
1 tablespoon sugar
2 tablespoon salt
5 tablespoon cornflour
2 inch size ginger
handful curry leaves
4 stalk lemongrass
8 pieces chilli padi
10 pieces shallots
10 cloves garlic
